This smoked chicken meal prep recipe is one of the easiest ways to turn a couple of whole chickens into juicy, flavorful BBQ you can use all week. When you’ve got time, fire up the smoker. When you don’t, dinner is already done.

This method is perfect for tacos, enchiladas, casseroles, soups, salads, or quick weeknight meals — all without reheating dry, bland chicken.

How to Smoke Chicken for Meal Prep

1. Prep the Chicken

Pat the chicken completely dry. Lightly coat with olive oil, then season generously on all sides, including inside the cavity and joints.

2. Stuff & Butter

Season quartered onions with olive oil and rub, then stuff them into the cavity. Top the chicken with butter pats to keep everything moist during the cook.

3. Smoke Low & Slow

Preheat the smoker to 250°F. Place chickens in foil pans to catch juices and prevent drying.

Smoke for about 2–3 hours, then bump the pit to 275°F to finish. Pull the chicken at around 162°F internal temperature.

4. Rest, Slice & Debone

Remove the chickens, tent loosely with foil, and let them cool slightly before slicing and deboning.

  • Whole chickens
  • Olive oil
  • BBQ by Biggs Chicken & Pork Rub
  • Yellow onions
  • Butter

👨‍🍳 Instructions

  1. Pat the whole chickens dry on all sides with paper towels
  2. Lightly coat the chickens with olive oil to help the seasoning adhere
  3. Season the chickens generously on all sides with BBQ by Biggs Chicken & Pork Rub
  4. Season inside the cavity as well for added flavor
  5. Quarter the onions, lightly coat with olive oil, and season with the same rub
  6. Stuff the seasoned onions into the chicken cavities
  7. Preheat the smoker to 250°F
  8. Place the chickens in pans to retain juices and insert temperature probes
  9. Add small pats of butter on top of each chicken
  10. Smoke at 250°F for about 2 hours
  11. Increase smoker temperature to 275°F to finish cooking
  12. Continue cooking until the internal temperature reaches about 162–165°F
  13. Remove the chickens from the smoker and loosely tent with foil
  14. Allow the chickens to cool before deboning
  15. Debone the meat and portion for meal prep or vacuum sealing
