Today we’re throwing down a batch of smoked chicken wings using a no-fuss method that delivers crispy skin, juicy meat, and big BBQ flavor — all in under an hour. It’s called the Zero to 400 method, and it couldn’t be easier. Wings go on cold, the grill comes up to temp, and magic happens in real time.

We started with about 4–5 pounds of chicken wings, pre-cut into flats and drums and patted dry. The drier they are, the crispier the skin. Spray them down with Pam, season heavily with Honey BBQ Rub, and let them sit for a few minutes while you get the grill started.

🔥 Cooking the Wings: The Zero to 400 Method

Here’s where it gets fun. Most wing recipes tell you to preheat your smoker. This one? Skip it.

Step-by-step:

  • Fire up your pellet grill and immediately place your seasoned wings on the top rack.
  • Set the grill to 400°F — but don’t wait. The wings go on cold and cook as the grill comes to temp.
  • After 30 minutes, flip them. Cook 30 minutes more. That’s it.

🍯 Sauce 'Em (Optional… But Recommended)

These wings are delicious straight off the grill — but if you want to take them over the top, try tossing a few in PS Seasoning’s Mug Shot Root Beer BBQ Sauce. We thinned it slightly with water and gave the wings a quick toss before putting them back on the grill for 6–8 minutes to set the glaze.
